Yam Gnocchi With Kale

If you love gnocchi but are on a grain free diet, this new recipe is worth a try. The gnocchi is not cooked in water because we used coconut flour, which would break apart in water. We decided to fry them in a tasty rosemary, garlic and shallot butter. We also added raw kale with a side of tomato beet sauce that brought the dish together really well. Kale is high in vitamin A, vitamin C and vitamin K. Vitamin K is a key nutrient in regulating our body's inflammatory process. See recipe below. Enjoy!

Cauliflower 'Rice' With Fish

Cauliflower has antioxidants and anti-inflammatory nutrients. It is an excellent alternative to rice and a great choice if you are on a grain free diet! We created a 15-20 minute recipe for fish and cauliflower 'rice' that incorporates raw foods. The fish and onion mix are the only food that has been cooked. The rice and corn are raw and energizing! Rooibos Tea and Date Ice Cream

The benefits of Rooibos tea includes minerals and antioxidants! For our latest dairy free ice cream recipe, we created a 'Rooibos and Date Ice Cream' that is not only healthy but also sweet and refreshing. Raising Backyard Chickens

In January the city of Toronto ruled on banning the practice of raising chickens in your own backyard, on the basis that the chickens are a possible health risk and noisy! 
Does the city not pose a health risk due to toxins and pollution?! Is the city not noisy from people, cars and ongoing construction?! 
Hopefully the city will overturn their judgement on banning chickens in the city, based on more accurate information/facts that can be provided to them. Paul Hughes may be such a man - you can read about his story here
We want to live a sustainable life and one day raise our own chickens - for eggs. If you live outside the city, and are interested in raising backyard chickens, there is a website called Backyard that provides information on successfully raising your own healthy 'backyard chickens'. Zucchini - 'Spaghetti' and Meatballs

Our latest zucchini pasta is 'spaghetti' and meatballs! We rarely eat meat, but when we found grass fed beef, we decided to buy some. We are still incorporating raw foods daily, so we combined raw zucchini with healthy and juicy meatballs (see recipe below.) This recipe is very tasty! You can feel energy from the raw zucchini. The meatballs were baked in the oven after marinating in an onion, spice and pepper mix for 20 minutes. It is a great choice for meat lovers who are on a grain free diet. Enjoy!

Simple Date Tarts - Nut free

Dates are naturally sweetened and healthy for you. They contain nutrients such as calcium, fiber, amino acids, sulfur, iron, manganese, magnesium, phosphorous, copper and potassium. They are also a good source of dietary fiber and are rich in vitamins A1, B1, B2, B3 and B5. We love the flavor in butter tarts and noticed that our dried dates tasted similar to butter and sugar, so we decided to make some simple date tarts that consist of only 4 ingredients! The date filling is raw and nut free so it is a good choice for those who presently have nut allergies. The tart crust is gluten free and grain free so they are very healthy! See recipe below. The Benefits of Barley Miso Soup

In Japan, those affected by radiation sickness from the atomic bombings of Hiroshima and Nagasaki, were treated with miso soup. Miso neutralizes toxins and alkalizes the blood. It contains an excellent source of digestive enzymes, probiotics, essential amino acids, vitamins and minerals! We wanted to make miso paste from scratch but were uncertain about the exact process of fermenting. We decided to purchase some barley miso paste for now, until we can learn how to ferment it ourselves. Miso soup is very healthy and tasty! See our simple recipe below. Red Beet And Carrot Cookies

Juicing is healthy! We made some beet and carrot juice and used the leftover pulp to make some cookies! We use a Breville juicer for our vegetables and save the pulp because it still contains about 20% of the juice after juicing. We followed most of our Beet Carrot Cacao Mini Muffins recipe but we added more beet and carrot and didn't add the cacao powder. The cookies are gluten free and dairy free so they are healthy and tasty! See recipe below. Enjoy!

A Red Latté

Red rooibos tea is caffeine-free and rich with minerals such as iron, calcium, potassium, copper, fluoride, manganese, zinc and magnesium. It contains anti-oxidants that have been shown to increase when you grind the tea and make it into a Red Espresso. We love lattés, so after we made our espresso shots, we added steamed milk that we frothed. Unfortunately, all the milk alternatives that we have tried so far (coconut, soy, rice and oats milk) can't produce foam so we're still unable to make cappuccinos. We used oats milk for our 'Red Latté' and it tasted amazing! We love that it's caffeine free and that it provides us with health benefits! Give it a try. See process below. Enjoy!

Zucchini 'Fettuccine Alfredo'

One of our favorite pasta dishes is Fettuccine Alfredo. We had some coconut cream available so we decided to create a dairy-free version of the Alfredo sauce and incorporate it with some zucchini pasta. Although it didn't taste like the Alfredo sauce we were used to, because coconut cream is sweeter as opposed to Parmesan being saltier, the results were still very tasty! It's worth trying out! (See recipe below.) The health benefits of coconuts include fiber, vitamins and minerals. Coconuts are used in modern medicine to kill viruses that cause influenza, herpes, measles, hepatitis C, SARS, AIDS, and to kill bacteria that cause ulcers, throat infections, urinary tract infections, gum disease and cavities, pneumonia and other diseases! Beet and Kale Cauliflower Crust Pizza

The super-nutrients found in kale include glucosinolates, which help to activate detoxifying enzymes in the liver that neutralize carcinogenic substances. It is an excellent source of vitamin K - a key nutrient for regulating the body's inflammatory process. Since we are incorporating raw foods daily, for our latest dairy free pizza recipe, we baked a cauliflower crust topped with raw kale and red onions that were oven dehydrated (at 130°) for 30 minutes. Oven dehydrating at a low temperature of 130° removes the water content, but keeps the enzymes, vitamins and minerals in place. The pizza crust and other ingredients were baked at a regular temperature (of 325°F) for about 15 minutes in total. We also had a side of raw avocado soup. See pizza recipe below. Enjoy!

Gluten Free Coconut Donut Holes

Heating cooking oil changes its chemistry - oils that are healthy at room temperature can become unhealthy when heated above certain temperatures. However, Coconut oil is heat stable, so it is suitable for cooking at high temperatures. Coconut oil contains lauric acid which turns into monolaurin when digested. Monolaurin is an antibacterial and antiviral substance and has been used to fight viruses, bacteria, yeast and fungi. Coconut oil is predominantly medium-chain fatty acid (MCFA). The liver and gall bladder do not need to digest and emulsify MCFA, so consuming coconut oil results in energy, increased metabolic rate and increased circulation.
Our latest gluten free recipe is 'Coconut Donut Holes' made with coconut oil, coconut flour, shredded coconut and coconut palm powder/nectar. We pan fried the donut holes with organic coconut oil so they are healthy to eat! See recipe below. We also made a 'hard chocolate sauce' using cacao and coconut oil instead of butter. Very healthy and tasty!

Zucchini 'Lasagna' with Eggplant and Shiitake Mushrooms

Our latest zucchini pasta recipe that we created was inspired by Citron Limette. Our recipe included eggplant and shiitake mushrooms with a homemade salsa sauce (see recipe below). It required a little more preparation than our Zucchini 'Ravioli', but it is worth trying out if you want to incorporate more raw foods, or are on a grain free diet. Zucchini is a great alternative to pasta and is high in vitamin C, potassium, magnesium and manganese. Give it a try!

Raw Kitchari - With Cauliflower 'Rice'

In India, the mix of rice and mung beans is considered easy to digest and is said to purify the digestion and cleanse the body of toxins. We came across the recipe for 'kitchari' when we were learning about digestive cleansing. Last week we recreated the recipe we found but didn't use white basmati rice and instead used pre-soaked brown rice. We also didn't have any mustard seeds or guee so we used coconut oil. It was very tasty! This week, we thought we would try a raw version by using the recipe for 'kitchari' with cauliflower 'rice' and lightly sprouted mung beans. The results were amazing! Every time we eat raw, we feel instant energy. Since there are recipes such as 'kitchari' that use rice in cleansing, we have not decided to cut rice of our diet for now, but will also continue to eat as much raw foods as possible! Our onions and garlic were lightly fried with coconut oil so it's a 90% raw dish. We are still getting used to the raw onions and garlic, even after soaking them in water.
